There's nothing too fancy about this style omelette


Ingredients:

  • 3 Medium Potato

  • 3 tbsp Olive Oil

  • ¼ tsp Salt

  • 1 Medium Onion

  • 5 Eggs

  • Pepper to Taste

  • 2 tbsp Chopped Coriander

  • 1 tsp Red Chili Flakes

Instructions:

1. Peel the potatoes and cut into thin slices then wash in water

2. Dry the potato with a towel and fry in a pan with salt and cooking oil for 2-3 minutes

3. Cooking for 2-3 minutes with lid on then add sliced onion and cook until soft

4. Crack open eggs in a clear bowl and add some salt and pepper to taste

5. Give it a whisk, add coriander, red chili flakes, fresh coriander and add the potatoes

6. Transfer the potato egg mixture back into the pan and cook on low-medium heat with lid on until golden brown

Crushed pork rinds make a crunchy coating for chicken tenders.


INGREDIENTS

  • 50gm plain pork rinds

  • 1kg chicken tenders (about 12 pieces)

  • 3 tablespoons Dijon mustard

  • 1 teaspoon garlic powder

  • 1/2 teaspoon cayenne pepper

  • 1/4 cup olive oil

INSTRUCTIONS

  • Place the pork rinds in a large Ziploc bag. Seal the bag, removing as much air as possible. Use a meat pounder to crush the pork rinds into crumbs. Place the crumbs in a shallow bowl.

  • Pound the chicken tenders with a meat pounder. Brush them all over with the mustard and sprinkle them with garlic powder and cayenne pepper.

  • Dredge each chicken tender in the crushed pork rinds, pressing on both sides to help the crumbs adhere.

  • Heat a nonstick skillets over medium-high heat, about 2 minutes. Add the oil.

  • Add the coated chicken tenders. Reduce the heat to medium. Fry the chicken pieces until golden brown and cooked through, 3-4 minutes on each side.

Tasty chicken patties are a great way to use up leftover chicken. They are wonderfully crispy! They are also keto, gluten-free.



INGREDIENTS

  • 2 cups cooked chicken breasts cubed

  • 2 large eggs

  • 1 teaspoon salt

  • 1/2 teaspoon black pepper

  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon dried thyme

  • 1/8 teaspoon cayenne pepper

  • 1/4 cup olive oil

INSTRUCTIONS

  • Place the cooked chicken cubes, eggs, salt, black pepper, garlic powder and cayenne in your food processor’s bowl. Process into a uniform mixture.

  • Heat 2 tablespoons of the olive oil in a large skillet over medium heat.

  • Drop the mixture into the hot oil, measuring 1/4 cup per patty and fitting 4 patties into the skillet. Gently flatten them to 1/2-inch thick with the back of a spoon.

  • Cook the chicken patties until crispy and golden brown, 3-4 minutes per side. Transfer to a plate and cover with foil to keep warm. Add the remaining olive oil to the skillet and cook the remaining patties.

Serve immediately.
